Lamb Gyro

IMG_4421 IMG_4421Still have leftover lamb, the obvious option is to make a lamb gyro sandwich. It’s not anything ground breaking but it is delicious and resourceful. Besides, didn’t momma ever tell to never through out good food?

By reinventing leftovers, you’re saving money/not wasting food and you’ll feed the kids leftovers without them even knowing it! Enough with tacos, it’s Gyro time!IMG_4425

Lamb Gyro

(serves 4)

approx. 4 cups of hand-torn cooked lamb meat

salt and pepper to taste

dried Greek oregano

Assembly

4 homemade pita breads, lightly warmed

Tzatziki sauce

sliced or diced tomatoes

 sliced red onions

French fries (optional)

foil or food wrap paper

  1. Bring your lamb meat to room temperature before reheating. Ensure all your toppings and wrapping are organized. To cook your meat, add a little olive oil in a pan and gently toss over medium heat for 3-4 minutes to heat through. Alternately, you may place in an office safe bowl, cover and place in a pre-heated 350F oven for 8-9 minutes (some of you may even wish to reheat in the microwave, place in a boil covered and zap for 2 minutes). Sprinkle with oregano, keep warm.
  2. Warm your pita bread in the oven or a non stick pan on your stovetop. Lay out your food wrapping on your counter and place the warmed pita bread on top, with about a third of the pita bread laying outside one corner of the wrap by a third.
  3. Pile your lamb meat along each pita bread, smear Tzatziki and top with tomatoes, onions (and fries if you wish).
  4. Bring together the two sides of the pita to enclose your sandwich then bring up the sides of paper/foil and wrap tightly around your pita. Fold the bottom flap tightly underneath the sandwich and serve with a cold Fix beer.
